Chettinad Spicy Chicken Dry Roast

Ingredients

Chicken – 1
Tomatoes Big – 4
Onions Big – 4
Garlic – 3 Full pods big
Oil – 200 gms.

Grind together

Cloves: – 4
Ginger – 4 Inch Piece
Pepper Corns – 1 Teaspoon
Turmeric Powder – 1 Teaspoon
Red Chilli Powder – 3 Teaspoon
Jheera – 1/2 Teaspoon
Salt – To Taste

Method

Clean and cut chicken into joints.
Grind the red chilli powder and also the masala and garlic and ginger peeled.
Take 1/2 the masala and smear on the chicken pieces and set aside for 1/2 hour.
Fry in oil for 10 minutes.
Heat oil, fry onions, add remaining half masala. Then add cut tomatoes.
Cook well adding hot water. When the mixture boils, add the fried chicken and let it cook till done and dry. Add one teaspoon vinegar and remove.

Chicken Biriyani

Ingredients

Chicken – 1/2 Kilo
Basumathi Rice – 1/2 Kilo (soaked for 1 hour)
Ghee – 200 gms
Cloves – 4
Cardamom – 3
Cinnamon – 1 Inch piece

Grind together
Ginger – 1 Inch Piece
Garlic – 12 peeled cloves

Onions big – 3 chopped
Tomatoes big – 2 chopped
Green Chillies – 8 Slit
Mint leaves – 1 Bunch
Coriander leaves – 1 Bunch
Lime – 1
Salt – To Taste

Method

Heat ghee in a pressure cooker, add cinnamon, cloves & cardamom, then add slit green chillies, chopped onions and fry.
Then add ground garlic ginger paste and fry for a few minutes, add cut and cleaned chicken pieces. chopped mint leaves, salt and fry well.
Add cut tomatoes mix well, add the soaked Basumathi rice, mix well, add double the amount of hot water, mix well, and cover the lid and pressure cook till done remove from fire, add lime juice and garnish with coriander leaves.

Chicken Crumb Chops

Ingredients

Chicken – 1 Kilo (Cut into 10 pieces)

Grind Together

Coriander – 2 Teaspoon
Dried Red Chillies – 8
Jeera – 1/2 Teaspoon
Pepper – 1/2 Teaspoon
Ginger – 1 Inch piece
Garlic – 1/2 a Pod (peeled)
Khus Khus – 1 Teaspoon
Salt – To Taste
Egg – 1
Oil – For frying
Bread crumbs – For coating

Method

Grind all the masala and salt to taste. Marinate the chicken pieces for 1 hour.
Pressure cook the marinated chicken with a little water for 10 minutes.
Open lid, cook chicken till the chicken is dry.
Beat the egg, add a little salt, dip each chicken piece, roll in bread crumbs and deep fry. Serve hot.
