Cabbage Chutney

Ingredients:

  1. Onions – 2 big
  2. Garlic – 4 flakes
  3. Cabbage – 1/4 kg
  4. Oil – 3 Tbl sps
  5. Red chillies – 10
  6. Fenugreek seeds – 2 tsps
  7. Mustard – 1 tsp
  8. Asafoetida – 1/4 tsp
  9. Thick tamarind extract – 2 Tbl sps
  10. Salt – as required.
  11. Chopped coriander
  12. leaves – 1 Tbl sp

Method:

  • Chop cabbage finely and fry well in oil. Keep aside.
    Cut onions lengthwise.
  • Heat little oil and fry mustard, fenugreek, chillies, garlic and then onion till golden.
  • Allow to cool and grind to smooth paste with salt.
  • Mix fried cabbage, tamarind extract to the paste.
  • Sprinkle coriander leaves, mix well and serve.
